Vintage Apple

Coming from the unprecedented “pandemic” year of 2020, I wanted to embrace the new year. There are so many things that I have not done in my life. A sort of bucket list if you will. I know sounds cliché. I started thinking about things I wanted to accomplish; projects I want to start, projects I want to finish, places I want to go, and different foods I want to make just to name a few. I decided the first thing to tackle on my list was to make one new recipe a month for the entire year. As a wife and mother, I get a happy heart to see my family enjoy the meals prepared for them.

Back in January, James and I took a one of our Saturday adventures out of town. Y’all know how I love the thrift stores, if you don’t well stick around because you will. I went to my favorite thrifty store. I love looking at all the items, just imagining the people who used them. I found a vintage amber glass pie plate for 25¢. I felt that still small voice speak to my heart… Apple Pie. My first new recipe of 2021 will be apple pie. I have never made a pie, but no better time to learn. After searching through my cookbook collection, and fighting the self doubt. I decided to take ingredients from several different recipes to make one unique recipe that fits my family. Disclaimer, the crust is not handmade it prepackaged. Homemade pie crust is on the “list” for later. I made the pie, my family loved it. I have made this recipe several times since. Although now I am up to making two at time.

I want to share my recipe with you my friend. This recipe makes 1 apple pie. I pray you and your loved ones enjoy it as much as my family has. Just a tip…if you want a piece for yourself, you might want to make two pies because it will be gone in a blink of an eye!

My challenge for you my friend is to try something new this year. Because, every accomplishment starts with the decision to try.

APPLE PIE

Ingredients:

  • 1 cup packed brown sugar

  • 3 tbsp. self-rising flour (all-purpose can be substituted)

  • 1 teaspoon cinnamon

  • 1/4 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 5-6 cups apples peeled and sliced (I use golden delicious)

  • 1 pkg 9 inch double crust

  • 1 tbsp. butter

  • 1 large egg white

Instructions:

  1. After peeling and slicing apples, place in large bowl. You can toss with tbsp. of lemon juice if you choose.

  2. In a small bowl; combine the sugar, flour and spices. Set aside.

  3. Add sugar/spice mixture in with apples, toss to coat all the apples.

  4. Line a 9 inch pie plate with bottom crust; trim even with edge. Fill with the apple mixture. Place small dots of the butter all other the top. Roll remaining crust to fit top of pie, place over the pie filling. Trim, seal and flute edges or crimp with fork. Cut a small X slit on the top crust.

  5. Beat egg white until foamy; brush over top crust. Sprinkle with sugar (optional). Cover edges loosely with foil.

  6. Bake at 375° for 25 minutes. Remove foil and bake until crust is golden brown and filling is bubbly, about 20-25 minutes longer. Cool on wire rack. Serve with optional topping of choice, hint we love vanilla bean ice cream. Enjoy.
